Salty or bland, spicy or tender, thin or sweet ... The taste of cheese can be almost anything. But, as scientists have established, the taste of cheese is not the most important thing, the main quality.

How to choose cheese

First of all, look at the packaging - in the composition of the cheese are primarily:

  • milk (goat or cow),
  • salt,
  • special starter.

Often, additives are also added to cheese: calcium chloride (E509), lactic acid (E270) and beta-carotene (E160a). Depending on the type of additive that is added during fermentation, it turns out different varieties of cheese. When buying cheese should also pay attention to the presence of spices in the cheese and the percentage of salt.

Quality control

Natural cheese is expensive. It is known that for the production of 1 kg of cheese, it takes about 10 liters of milk. And what if you still want to buy high-quality cheese, but are not sure what it is worth paying for it at such a high cost?

  • Look at the packaging - if the composition of the cheese is vegetable fats, then it is low quality cheese and it should not be too expensive;
  • Cut a slice of cheese with a thickness of 0.5 cm and leave it in a warm place: if the cheese is not weathered but covered with a greasy film, then it is low-quality cheese;
  • Look at the slice of cheese: if the edges have withered and turned yellow, then a dye has been added to the cheese and this cheese is not of the highest quality;
  • Look at the color of the cheese: the whiter it is, the lower the quality of the cheese (this rule does not apply to the Adyghe cheese and brynze), the “drawing” of cheese is also important (the arrangement of holes and holes in the mass of cheese).

It is best to buy cheese in a sealed package, or in the packaging provided by the manufacturer. Cheese should be stored in the refrigerator, away from strongly smelling foods, vegetables and fruits.
