Plum pie - general principles of preparation

Plums for the cake are washed, remove the seeds. Fruits can be used whole, but more often divided into halves or chopped into smaller parts. Plums can be laid in the cake raw or cooked. Many recipes tolerate the replacement of fresh fruits with jam, jam or plum jam.

Puff pastry plum pie

The simplest version of plum pie, for which you need ordinary puff pastry. It is sold in any store and is usually frozen. Plums are used fresh, but no less tasty is a pie with plum jam or homemade jam.

Ingredients

• test 1 package up to 0.5 kg;

• 3 tablespoons of starch;

• 0.4 kg drain;

• sugar 0.5 cups;

• single egg or raw yolk.

Cooking

1. Defrost a packet of dough and lay it on the table. Roll out a rectangular layer, but not thinly.

2. Cut from the sides small ribbons up to two centimeters wide. We need eight pieces. At the same time, we give the future pie a rectangular or square shape.

3. We transfer the layer to a baking sheet or in a baking dish.

4. Release the plums and cut into small pieces.

5. Stir the fruit with starch. You can use not only potato starch, but also from corn.

6. We transfer the plums to the layer of dough in an even layer. If jam is used, then simply spread. Junk starch can not be put, as it itself is usually thick.

7. Sprinkle the filling with sugar.

8. Take the ribbons and spread the mesh on the cake. Lubricate the ends with an egg and pinch to the base. You can hide it.

9. All ribbons grease the rest of the egg. If the edges of the lower layer peek out, then they can also be lubricated.

10. We bake a plum pie for approximately 25 minutes. We set 200 degrees.

Closed pie with plums from yeast dough

A variant of a magnificent and airy cake with plums. For the test you will need dry yeast and milk. But you can knead it on ordinary water, whey or a mixture of sour cream with any liquid.

Ingredients

• 0.3 l of milk;

• 1 spoon without a hill of yeast;

• 30 ml of any oil;

• 1 egg;

• 50 grams of sugar;

• 1 tsp salts;

• flour.

For the filling, pour a pound and sugar if necessary.

Cooking

1. In heated milk or in another liquid, we dilute sugar and dissolve the yeast.

2. Throw a slightly incomplete teaspoon of salt, pour in the oil, you can take margarine, but it needs to be melted.

3. It remains to pour flour to the prepared ingredients, knead a steep but soft dough. Cover and keep warm for about two hours.

4. Plums just sorted into halves. You can cut it. But if the fruits are soft, it is advisable not to touch them again.

5. Divide the approached dough into two layers, roll the cakes. The lower part can be made a quarter more to form the sides.

6. Spread halves of plums, sprinkle with sugar to taste. If the fruit is juicy, then you can lightly sprinkle the pieces with starch.

7. Cover with the top cake, make holes, collect the edges of the crumpets together. You can dazzle some jewelry.

8. It remains to grease the pie with an egg and bake at 190 degrees until cooked.

Shortcake with Plums

A feature of such a plum pie is shortbread dough, which is always obtained. According to the recipe for it, you need butter. But this is an optional rule. With success, you can also throw margarine or any fat.

Ingredients

• flour 1.5 cups;

• 150 grams of oil (fat);

• eggs 2 pieces;

• a third glass of sugar for kneading dough;

• 0.5 kg drain;

• half a glass of sugar for the filling;

• a pinch of cinnamon, but more is possible;

• vanilla optional.

Cooking

1. Butter (fat) grind with flour until crumbs. If the fat is frozen, then you can take a knife and chop everything together.

2. Add the granulated sugar, stir, pour a pinch of vanilla and break one egg. Making the dough. If suddenly it does not gather and crumbles, you can pour a little vegetable oil or a spoonful of water. We pluck off a third and roll two koloboks of different sizes, put them in the refrigerator while the filling is being prepared.

3. We wash the plums, pull the seeds out of them, cut them in quarters. Add cinnamon, granulated sugar and stir.

4. We take out a large lump of dough and roll out the lower layer round or square, depending on the shape. We shift, do not forget about the small sides.

5. Now it’s the turn of plum filling, just lay it out in an even layer.

6. Roll out the remaining lump of dough from the refrigerator in the form of an oval or an oblong ribbon, cut into strips, weave the mesh on the cake.

7. Grease with an egg, bake a pie for up to 25 minutes at 200 degrees.

Quick plum pie with aspic

A variant of a quick plum pie for which kefir batter is prepared. You can bake such a miracle in a figured silicone form, it turns out very beautifully.

Ingredients

• a glass of sugar;

• egg;

• 0.2 kg drain;

• a glass of kefir;

• two glasses of flour;

• one tsp baking powder;

• 120 ml of oil;

• powder for decoration.

Cooking

1. Beat the egg with kefir. Similarly, you can take yogurt or fermented baked milk in the same amount.

2. Add sugar. If baking soda is used instead of a baking powder, then we are throwing it right now into kefir.

3. Next, pour the oil, add the flour and the ripper here, if soda was not previously laid. For flavor, you can sprinkle a little vanilla or cinnamon. The dough is ready.

4. Plums are just free from seeds, you can not cut.

5. Pour into the mold a large part of the mass, spread the halves of the drain and pour over the remaining mass.

6. Bake for about 40 minutes at 190 degrees.

Shortcake with plums and crumbs

Recipe for cake with crumbly plum plum dough with sweet crumbs. But the recipe’s specialty is protein fudge, which makes the cake extraordinary.

Ingredients

• three glasses of flour;

• two proteins;

• 0.5 tsp soda;

• a pound of plums;

• 0.2 kg of margarine;

• a glass of sugar.

Cooking

1. Pour 2.5 cups flour into a bowl. Take a grater and rub the margarine directly into the flour. A small piece can be left to lubricate the mold.

Pie with plum and apple pie

Another version of plum pie made from puff pastry, but it has a special filling. Minced meat requires heat treatment. But it's worth it.

Ingredients

• 0.5 kg of dough;

• 30 grams of oil;

• 0.3 kg of apples;

• 0.3 kg drain;

• 1 tsp cinnamon

• 0.2 kg of sugar;

• 1 tablespoon of starch;

• 2 tablespoons of cognac;

• an egg or just one yolk.

Cooking

1. Cut apples into slices, the skin can be left or removed. We do it at our discretion.

2. Plums are free from stones.

3. In a large skillet, melt a piece of butter and pour apples. The maximum fire.

4. After a minute, we throw plums to the apples. Boil the juice over high heat.

5. After a couple of minutes, we throw sugar into the filling, followed by cinnamon and pour cognac. Boil everything together for about five minutes and send the filling to cool. If the fruit is very juicy, it may take a little longer.

6. Add a spoonful of starch to the cooled filling and stir.

7. Roll out the dough and divide in half. The top layer of the pie can be made a little smaller.

8. Form a closed cake with a filling in the middle, tightly pinch the edges.

9. We make small cuts on the tops or cut out round holes.

10. Lubricate the cake with yolk or just a beaten egg, send it to bake until it is rosy.

Sour cream plum pie

Another version of the pie with plums from batter.

Ingredients

• 0.2 kg of sour cream;

• 3 eggs;

• 0.12 kg of sugar;

• 0.5 lemon;

• 0.4 kg drain;

• 10 grams of baking powder;

• 0.2 kg of flour.

Cooking

1. Mix the eggs with sugar. We introduce sour cream and beat well with a whisk.

2. Add the flour, combined and sifted together with the baking powder.

3. Rinse the lemon, rub the zest with small chips and send to the dough. We squeeze out a spoon of juice there. Stir and the dough is already cooked.

4. Lubricate any form, pour out the dough.

5. We lay out on the surface of the plum. Fruits need to be slightly drowned.

6. We bake at 190 until ready. On average, it will take about half an hour.

Plum pie - tips and tricks

• To make the pie yeast dough easy and fast, it is kept warm. But this is not enough. All ingredients, including flour, must be warm or have room temperature.

• If the yeast is unsuitable, the dough is frozen in one place or weakly fits, it is not necessary to throw it away. You can resort to some tricks. For example, dilute another portion of yeast in warm milk, let stand and pour into the dough. Flour will also have to be added. Instead of yeast, you can pour a little baking baking powder, it will also give porosity and airiness.

• Plum filling for a pie will be tastier if you pour cinnamon, ground nuts, you can pour a few tablespoons of brandy or any liquor.

• To prevent the filling from flowing out and soaking the bottom of the pie, put starch in it. You can also pour a layer of breadcrumbs or crumbs of dried cookies under the plums.
